Kale & Quinoa Sauté



Plant Based Meal Recipe: Kale & Quinoa Sauté

Total Cook Time: About 40 minutes

Makes: 2 – 3 servings


  • 1/2 cup dry quinoa
  • 5 stalks of kale
  • 1/2 red onion
  • 1 shallot
  • 6 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • 1 pinch of salt – or to taste


  • Cook quinoa – bring 1/2 cup dry quinoa in 1 cup of water to a boil, then turn down to simmer until water is gone (approx. 20 mins)
  • While quinoa is cooking, chop 1/2 red onion,  chop 1 shallot, and chop 6 cloves of garlic
  • Cut kale stalks along the stem about every 1 inch. Leave out the thickest part of the stalk
  • Sauté onion, shallot, and garlic in frying pan with 2 tablespoons of extra virgin olive oil for two minutes
  • Add kale to frying pan with a pinch of salt and sauté until kale is wilted (approx. 7 ins)
  • Add cooked quinoa to frying pan and sauté for 1 minute
